"Tuesday's Tasty Recipes AND To Tell the Truth"


For 4 servings you will need:
4 medium even potatoes
1 tsp. salt
2 to 3 Tbsp. melted butter
2 to 3 Tbsp. chopped fresh herbs
such as parsley, chives, thyme or sage
or
2 to 3 tsp. dried herbs of your chioce
4 Tbsp. grated Cheddar cheese
1 2/2 Tbsp. Parmesan cheese
Preparation:
1. Peel potatoes if the skin is tough, otherwise just scrub and rince them.
2. Cut potatoes into think slices but not all the way through. Use a handle of a spoon to prevent knife from cutting all the way.
3. Put potatoes in a baking dish. Fan them slightly.
4. Sprinkle with salt and drizzle with butter. sprinke wil herbs.
5. Bake potatoes at 425 degrees for about 50 minutes.
6. Remove from oven. Sprinkle with cheeses.
7. Bake poratoes for another 10 to 15 minutes until lightly browned, cheese are melted and potatoes are soft inside. Check with a fork.
Tips:
You may use caraway seeds or cumin in place of herbs, if desired. Use about 1 1/2 tsp. to 4 large potatoes.
Good served with: Any meat, fish or poulty dishes or as a main dish with just a salad.

Kalyn's and Mama's Favorite Cheese Baked Chicken

I have posted this before.
I used to cook this with a stick of margarine melted in the baking dish.
I found a similar recipe that said to:Line a 9 x 13 baking dish with aluminum foil and spray with cooking spray, and now I also use olive oil, instead of margarine. We liked it this way. It is better for you!
Preheat oven to 400 degrees.
This is an easy recipe and easy to adjust the quantity to make however much you want--you could do it for 2, or you could do it for a crowd. We tried similar recipes that have more ingredients, and this one is still our very favorite!
I usually use:
6 boneless, skinless chicken breasts
1 stick margarine, melted, for dipping in or olive oil
1 cup Parmesan cheese, (The kind in the jar is what we use for our recipe.)
You can cut the chicken into bite size pieces or leave the pieces whole.Dip the chicken into the margarine, then into the cheese, then place in the prepared baking dish.
Bake for approximately one hour, until golden brown.

TORTILLA SOUP
6 Corn Tortillas (Cut in 1/2 " Strips)
1 bunch green onions
1 clove garlic
2 tsp. vegetable oil
1 r oz. can chopped green chilies
1 can beef broth and 1 can chicken broth or 2 cans chicken broth
1 cup water (I used 32 oz. box chicken broth-no water)
1 can cream of chicken soup
4 chicken breasts (cut up)
2 tsp. Worchestershire sauce
1 tsp. ground cumin
1 tsp. chili powder
pepper to taste
paprika
12 oz. velveeta (or 6 oz. mild Mexican Velveeta)
Add all ingredients expecpt cheese, tortillas and paprika.
Cook until chicken is done. Simme for 30 minutes. I cooked it on low in the Crock Pot.
Add cheese and tortilla strips right before servind and warm just until cheese melts. Sprinkle with paprika. Makes 8 cups.

Now, "To Tell the Truth":
I have been trying to observe Lent and said I would try to
"give up Chocolate, Carbonation and Caffeine".
I have been staying completely away from the caffeine, but gave into the carbonation and chocolate! In fact, I have been craving chocolate, more than usual!
I have still been following through in having early morning time with God.

  3. Yummy recipes! I make a tortilla just like that.
    And wow, you took on alot for Lent. I just gave up the carbonation and it's been HARD. But I guess it's supposed to be, right??!

    Mailed your cd's today. They said 3 days.
    I do feel bad it's taken so long!
