Banana bread/cake is one of my Mom's specialties, and I like to make banana muffins. Jase first had us change to whole wheat flour, and then he began substituting sugar with honey. So here is our new family recipe:
Banana Muffins
1/2 cup shortening (maybe change to ?)
1 cup honey (original recipe-1 1/2 c. sugar)
2 eggs
2 cups whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1 cup mashed banana
1/4 cup buttermilk (milk with a little lemon juice)
1 tsp. vanilla
1/2 tsp. soda
1/2 c. chopped pecans (optinal-I don't usually use.)
Mix as listed. Put into greased muffin tins. Bake at 350 degrees 20-25 min.
(cake-30-35 min., bread-45 minutes.)
